Happy Thanksgiving! A recipe for the holiday: Pumpkin Bars!


Happy Thanksgiving everyone!  I hope you all enjoy your holiday.  If you are looking to whip up an amazing dessert tonight for your family and friends, look no further.  I made these last year and they were a huge hit!  I saw the recipe on the Food Network from Paula Deen, so  needless to say, they are not the healthiest things in the world...but Thanksgiving is a cheat day :)





Here is the recipe for Paula Deen's Pumpkin Bars


















Ingredients



4 eggs
1 2/3 cups granulated sugar
1 cup vegetable oil
15-ounce can pumpkin
2 cups sifted all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda








Recipe





Preheat the oven to 350 degrees F.


Using an electric mixer at medium speed, combine the eggs, sugar,
oil and pumpkin until light and fluffy. Stir together the flour, baking
powder, cinnamon, salt and baking soda. Add the dry ingredients to the
pumpkin mixture and mix at low speed until thoroughly combined and the
batter is smooth. Spread the batter into a greased 13 by 10-inch baking
pan. Bake for 30 minutes. Let cool completely before frosting. Cut into
bars.  Frost with cream cheese icing.  Eat!!







Eggs, sugar, oil, and pumpkin...all combined!







Combine flour, cinnamon, baking powder, cinnamon, salt, and baking soda in a medium bowl






Add the dry ingredients to the wet ingredients and start mixing!







Get it really fluffy!




Pour into baking pan evenly and place into the oven




Almost done!!




Cut into bars..time to ice!!




You can make your own, but I chose to make it easy on myself and use this instead






Spread out icing evenly by pouring it into a ziplock bag and cutting the tip







Ready to eat!  Enjoy!  And Happy Thanksgiving!!

Blazers, Stripes, and Beads


My new favorite fashion trend of the season are sleek blazers.  I picked one up recently and absolutely love it for work!  Today I decided to pair it with a simple striped beige and black top and a simple beaded necklace.

Mama's Chicken Parm


So I have a soft spot for a good Chicken Parmesan.  My family makes fun of me, because whenever we go to an Italian restaurant they know what I'm going to get--chicken parm.  I just can't resist the cheesy, saucy, delicious combination.  I think, however, that the reason I always order chicken parm is because I feel as though it's too complicated to make.  Why I thought that, I do not know.  So here is my first attempt at chicken parm and it was a hit!  And so easy!  









 Recipe for Mama's Chicken Parm





Ingredients:


2 boneless, skinless chicken breasts, halved in order to cook faster


1/3-1/2 cup flour


2 eggs


1/2 cup italian bread crumbs or panko bread crumbs


olive oil


Semi-Homemade Marinara Sauce (or regular tomato sauce of your choice)


mozzarella cheese









Start by cutting chicken breats in half.  Wrap in plastic wrap and pound them until they are about 1/2 inch thick






Pour the flour in a plate, beat the eggs in a bowl, and pour the bread crumbs on a plate.  Then dip each piece of chicken in flour, egg, and breadcrumbs in that order!






Ready to get cookin!






Coat the bottom of a large skillet with oil.  Place each of the breaded chicken breasts in and flip occasionally until fully cooked and browned.






Ready for some sauce and cheese!!  Place cooked chicken breasts on a baking sheet.






Get that sauce cooking up (also get some pasta cooked up if you want that on the side)






Add sauce to each piece of chicken as well as a generous amount of mozzarella cheese.  Place in the oven and broil until cheese is melted with slight browning.





And it's ready to eat!! Enjoy!

  • 1/2 cup of Salt (to brine the chicken)

  • Flour

  • Italian Seasoned Breadcrumbs or Panko

  • 2 Eggs

  • Olive Oil

  • 1/2 of a Small Onion

  • 2 Cloves of Garlic

  • (2) 28oz Can of Crushed Tomatoes 

  • (1) 12oz Can of Tomato Sauce

  • Salt

  • Pepper

  • Crushed Red Pepper

  • Mozzarella or Provolone Cheese

When the Leaves Fall Down

This is one of my absolute favorite fall looks.  A simple neutral toned outfit paired with chocolate colored boots makes for a simple and casual look for autumn.

I just got this top and I absolutely love it.  I've been able to wear it both to work and out for a casual day on the town.  It is extremely comfortable and the color looks awesome on my light skin (though my skin looks extremely white in this picture, it was the sun I swear!).  The pairing of this simple black and blue with pewter accessories really helps the color to pop!

Recipe: Chocolate Chip Muffins


I was getting tired of my usual bowl of Cheerio's before work, and decided it was time to mix up my breakfast for tomorrow.  I looked through a few recipes, and came across this one for Sinfully Rich Chocolate Chip Cookies.  Let's just say for once, I can't wait to get up tomorrow morning!!










Ingredients (yields 12 muffins):











2 cups flour
1/3 cup sugar
1/3 cup brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

2/3 cup milk
1/2 cup butter, melted

2 eggs, beaten

1 teaspoon vanilla extract

1 1/2 cups semi-sweet chocolate chips


Recipe:



1.  Preheat oven to 400 degrees F and line a 12-cup muffin pan with paper cups, or grease the pan.

2.  In a large bowl, combine all dry ingredients.

3.  In another bowl, mix melted butter, beaten eggs, milk, and vanilla.

4.  Pour the wet ingredients into the dry and mix until just combined.

5.  Stir in chocolate chips.

6.  Divide into 12 muffin cups.

7.  Sprinkle a little granulated sugar on top of each muffin for a little sparkle and crunch (optional).

8.  Bake at 400 for 15-20 minutes or until a toothpick inserted into middle of muffin comes out clean.







The batter mixed up...just use a spoon to mix it up!  Don't mix too much




Scoop it out!




Add some extra chocolate chips and granulated sugar to the tops!




Almost done!




Out of the oven....couldn't wait to eat these!




So. delicious.
